Roasted Corn Black Bean Salsa

        1 can of black beans rinsed and drained

       2 cups of cherry tomatoes, quartered

       2 avocadoes diced

       1 small red onion diced

       4 corn on the cob roasted  

       Juice of 4 limes

       ¼ tsp of nutmeg

       1 tsp salt

       2 tsp black pepper

       1 tsp garlic salt

       2 tsp of oregano

       1 tsp of dill

       ¼ - ½ cup finely chopped cilantro

 

Directions:

With a sharp knife carefully sear corn kernels from cob. In a large serving bowl combine all ingredients and mix together lightly.

Serve with chips or flat bread

Addition/Variation

The following ingredients can be added to above ingredients

2 Cups of peeled, diced cucumber

1/2 tsp salt

1 tsp chili powder
